“Without tradition, there is no innovation.” This is the motto that inspires Chef Di Iorio as he masterfully mixes the flavors of our culinary history. Although his food is conceptually essentialist, it is also rich in flavor and sophistication. Outstanding raw materials selected from small local producers form the foundation for dishes that are focused on flavor, in a continuous dialogue between innovation and tradition.

The tasting menus created by Chef Di Iorio take your taste buds on an unexpected journey, enhanced by carefully curated raw materials and local specialties. Each menu is a tribute to the Eternal City, dedicated to the intersection of terroir and research with a keen eye for tradition. And for those with dietary restrictions, we offer a celiac menu that is a real gourmet tasting menu with four courses, including dessert and bread.

Our Wine Cellar

For optimum food and wine pairings, our head sommelier is delighted to make recommendations from our excellent selection of Italian and international wines to accompany and enhance the chef’s culinary delights. The cellar has more than 600 labels on offer, which – thanks to Crognale’s painstaking research, diligence and passion – feature some of the most interesting producers on the wine scene in Italy and abroad.
